Alternative Pasta

So in all honesty, I haven’t seen a big difference in taste or texture or impact on blood sugars between red lentil, vs. green lentil vs. chickpea pasta. They are all pretty similar to me. And all of them don’t do great as leftovers so its better to only cook as much as you think you are going to eat for a meal. My kids think pasta is more fun in shapes so this Chickpea Fusili has been our go to for now.
